Olivia Percoco
Olivia Percoco serves as the Local Food Projects Manager with Resourceful Communities at LegacyWorks Group, where she provides technical assistance and capacity-building support across North Carolina with a focus on local food access, economic development, and environmental stewardship. She previously served in the same role under The Conservation Fund.
Olivia holds a B.S. in Community and International Development with a minor in Food Systems from the University of Vermont. Her passion for food equity and community resilience began during her AmeriCorps VISTA year with the Oregon Health Authority, where she implemented statewide food insecurity initiatives and joined the inaugural Partners for a Hunger-Free Oregon Fellowship. These experiences continue to shape her work supporting community-led efforts that strengthen equitable and sustainable food systems. When she’s not working, Olivia can be found thrifting, working on art projects, or exploring North Carolina’s hidden gems with her husband and friends.
